Feta Dip

I do love a dip but I am resisting the urge to dip crisps, nachos, Doritos etc in them. Instead I have been ordered by my other half to provide vegetable crudites on his return from work (get him!) so he will have an instant, healthy snack to dive into as opposed to making himself 3 rounds of cheese sandwiches before we’ve even sat down to dinner (once the kids are in bed). Actually this a very good idea, because when you get in from work, even if you’re not physically hungry you just feel that, after changing into your slob clothes, you want to head to the fridge and nibble, to mark that you have come home – and now the relaxing starts. I invented this dip today after pondering what I had in the cupboards overnight – and it was wonderful. The au pair snaffled the remains into her room and didn’t emerge till the dish was bare, as it were. Oh, and did I mention all the ingredients are reasonably cheap so this is a good budget meal (if you do enough veg it is a full, in-front-of-the-TV meal for one).

Feta Dip – serves 4 (or 1 greedy)

Ingredients:

200g feta cheese

200g can butter beans including juice

small bunch parsley, roughly chopped 

2 cloves garlic, peeled and roughly chopped

black pepper

Method: Bung everything in a liquidiser and voila!
