5 deliciously low-cost jubilee recipes

A four-day weekend sounds good to us – but do you know what sounds even better? The delicious food we are going to be eating over the celebration period. When you think of British party food, images of pork pies, strawberries and cream and trifle come to mind. There are so many jubilee recipes to choose from.

There is a whole world of scrummy, mouth-watering recipes out there for you to try, and they don’t have to cost an arm and a leg. Homemade recipes are not only nicer a lot of the time, but you can get more bang for your buck. Put in a little time and love and your purse will thank you.

So, here are our top 5 deliciously low-cost jubilee recipes.

 

Eton Mess Scones

Cost per serving: 89p

Supermarket favourite Lidl have a whole host of delicious Jubilee recipes, but this one stuck out to us. Eton mess alone gets the tastebuds tingling – but throw in a scone and you’ve got a real winner.

For this recipe, all you need is a punnet of strawberries, 300ml of double cream, three meringue nests, six scones and some strawberry jam.

From Lidl, this will cost you:

  • £2 for a punnet of strawberries
  • 99p for 6 scones
  • 99p for 8 meringue nests
  • 99p for 300ml double cream
  • £1.45 for a 450g jar of Mirabel Strawberry Conserve (only 100g needed: 33p)

Total = £5.30

Cost per serving = 89p

Coronation Chicken Salad

It’s not a royal celebration without making some delicious coronation chicken. Coronation chicken was created in 1953, when chefs Constance Spry and Rosemary Hume were preparing food for the banquet to celebrate Queen Elizabeth The Second’s coronation. There’s no better way to celebrate our monarch than making the recipe made just for her.

This filling and super easy to make coronation chicken salad from Delicious will be a hit amongst your guests, and it will take you very little time to put together.

For this recipe, you will need mayonnaise, curry powder, 2 chicken breasts, 85g watercress, half a cucumber, 100g cherry tomatoes, lemon juice and mango chutney.

From Asda, this will cost you:

  • 49p for a 500g tube of mayonnaise (approx. 20g needed: 2p)
  • 80p for 80g curry powder (approx. 5g needed: 5p)
  • £2.55 for 2 chicken breasts
  • £1 for 85g watercress
  • 52p for a whole cucumber (only half needed: 26p)
  • 50p for 250g cherry tomatoes (only 100g needed: 20p)
  • 50p for 250ml lemon juice (approx. 45ml needed: 9p)
  • 60p for 70g mango chutney (35g needed: 30p)

Total: £6.96

Cost per serving: £1.12

You will have mayonnaise, curry powder, half a cucumber, cherry tomatoes, lemon juice and mango chutney left over. This means can easily double the recipe and would only need to buy extra chicken and watercress. You can find the full recipe here.

 

Ham and potato salad

Cost per serving: 80p

This is not your usual potato salad. Adding veg and meat creates a whole new recipe and will go down a treat. This fresh salad will become a hit and is extremely easy to make. Plus, it will look like you spent hours slaving away, when really, it’ll take you less than 30 minutes.

This recipe consists of the following ingredients: gammon, red onion, cider vinegar, baby potatoes, green beans, parsley, olive oil, mustard and honey. Just a few ingredients can create a gourmet salad.

From Tesco, this will cost you:

  • £3.40 for 1kg of gammon (500g needed = £1.70)
  • 21p for 1 red onion
  • 80p for 350ml cider vinegar (45ml needed = 20p)
  • 81p for 1kg baby potatoes (750g needed = 61p)
  • 77p for 220g green beans (125g needed = 35p)
  • 50p for 180g wholegrain mustard (18g needed = 5p)
  • 72p for 340g (34g needed = 7p)

Total: £7.21

Cost per serving: 80p

As with the other recipes, you will have leftovers of practically everything. You can use the leftover potatoes and green beans to pad out the salad or use them for a delicious dinner. You’ll also have plenty of honey and mustard to use up after. You can find the full recipe here.

 

Custard Cream Cupcakes

Cost per serving: 33p 

This delicious recipe from Jane’s Patisserie is bound to satisfy your sweet tooth. You’ll need butter, sugar, eggs, self-raising flour, custard powder, icing sugar, vanilla extract and custard cream biscuits.

From Asda, this will cost you:

  • £1.75 for 250g butter
  • £1.60 for 1kg caster sugar (150g needed = 25p)
  • £1 for 6 eggs (3 needed = 50p)
  • 55p for 1.5kg self-raising flour (125g needed = 6p)
  • £1.60 for 350g custard powder (90g needed = 41p)
  • 83p for 500g icing sugar (300g needed = 50p)
  • £1.35 for 35ml vanilla extract (5ml needed = 20p)
  • 45p for 400g custard creams (150g needed = 18p)

Total = £9.13

Cost per serving = 33p

You will have a few eggs leftover for brekkie, plenty of flour, icing sugar and vanilla extract to make more cakes in future, custard powder to make desserts and custard creams for your tea. You can find the full recipe here.

 

Caramelised Onion Tart

Serves: 4

Cost per serving: £1.30

This recipe from BBC Good Food is not only delicious, but pretty simple to make. It will take some time (approximately 90 minutes), but it isn’t difficult. The super scrummy caramelised onions and crisp shortcrust pastry are moreish and will win your guests over after one bite.

This recipe has a simple ingredient list: shortcrust pastry, onions, eggs, milk and a cheese of your choice. You’ll also need olive oil and thyme.

From Aldi, this will cost you:

  • 85p for a pack of premade shortcrust pastry
  • 49p for 1kg onions (500g needed = 25p)
  • £1.15 for 6 eggs (3 needed = 58p)
  • 69p for 568ml milk (300ml needed = 37p)
  • £1.99 for 400g cheddar cheese (100g needed = 50p)

Total: £5.17

Cost per serving: £1.30
